Brownies - Sweet Heat
I found a perfect brownie recipe that fits my taste, with caramel, its dense & chocolaty. The brownies where excellent on their own but I wanted to add another level of flavor and complexity to the brownies.
Tamal Pie
Or as us gringos would say Tamale Pie. I have seen a few recipes for Tamale Pie, even tried one and it was good. However it didn't have the taste of the tamal that my wife (mi Mexicana Bonita) made. The recipe that I followed used corn meal + flour. In order to get that taste of a real tamal I used Maseca para tamal, Tamale flour. For the meat portion of the dish the recipe called for 1 pound of ground beef and 1 package of Taco Seasoning. Like I said previously the dish was good but….. I went a little further and tried to get more authentic flavors.
Shopping for meat or yet a specialty cut in Mexico can lead to a disappointment. Beef generally is not aged in Mexico. It goes from the slaughterhouse to the table. The cuts of meat are usually about 1/2 inch in thickness and some will still ask for it pounded, (Millanaisa ). Here is a list of Mexican cuts available listed by sections of desired cuts.
