Smelts are a family of small fish, the Osmeridae, are common in the North American Great Lakes.  Enough of the learning curve.  LETS EAT............



While tipping a few yesterday with my friends,I was lucky enough to have a couple of bags of smelts given to me.  These will surely be relished as i haven't eaten these succulent little creatures in about 20 years.

For my first pound of smelts they will be seasoned according to my fondness for Cajun flavors.
Love that Cajun!!




Enjoy I know I will,  Oh ya for your side, some slaw or a few beers, cold beers.
