Brownies - Sweet Heat
I found a perfect brownie recipe that fits my taste, with caramel, its dense & chocolaty. The brownies where excellent on their own but I wanted to add another level of flavor and complexity to the brownies.
Tamal Pie
Or as us gringos would say Tamale Pie. I have seen a few recipes for Tamale Pie, even tried one and it was good. However it didn't have the taste of the tamal that my wife (mi Mexicana Bonita) made. The recipe that I followed used corn meal + flour. In order to get that taste of a real tamal I used Maseca para tamal, Tamale flour. For the meat portion of the dish the recipe called for 1 pound of ground beef and 1 package of Taco Seasoning. Like I said previously the dish was good but….. I went a little further and tried to get more authentic flavors.
Shopping for meat or yet a specialty cut in Mexico can lead to a disappointment. Beef generally is not aged in Mexico. It goes from the slaughterhouse to the table. The cuts of meat are usually about 1/2 inch in thickness and some will still ask for it pounded, (Millanaisa ). Here is a list of Mexican cuts available listed by sections of desired cuts.

Paseo por Niagara River
Finalmente llegaron los dias calurosos a Niagara Falls! yaaayyy, ya se, mucha gente no les gusta el calor debido a que la region esta en medio de varios lagos, el calor es muy humedo y eso es algo incomodo, especialmente para los nativos, gente que nacieron en estos lugares y que la mayoria del tiempo hace desde fresco a frio intenso. Pero yo, habiendo nacido en Mexico, en la cd de Monterrey donde se llega a altas temperaturas casi los 50 grados centigrados, pues para mi no es gran problema el calor humedo ;) al contrario, lo disfruto y lo atesoro, porque los inviernos son muy frios y muy largos.
Banana Oat Muffins
Aunque hoy el clima esta muy calido, creo alrededor de unos 30 grados centigrados, aun asi, me anime a hacer estos ricos muffins, bueno, la verdad es la primera vez que los hago y aun no los pruebo :p asi que al ratito les confirmo que tal salieron de sabor, porque de vista se ven bien :D
