Homemade Beer battered Fish Tacos
This recipe I found it in Internet, I do not remember where did I get it from. I only made the batter for the fish, next time I will make the sauce, it sounds good too :D
8 servings
Ingredients:
1 pound cod fillets, cut into 2 to 3 ounce portions
1 (12 ounce) package corn tortillas
1 teaspoon baking powder
1 cup all-purpose flour
1 egg
1 cup beer
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
2 tablespoons cornstarch
1 teaspoon salt
3/4 cup mayonnaise
1 lime, juiced
1 jalapeno pepper, minced
1/2 teaspoon dried dill weed
1 teaspoon ground cayenne pepper
1 sliced lime or lemon
1 quart oil for frying
1/2 medium head cabbage, finely shredded OR Lettuce if you prefer!
Directions
First start off by making your beer batter ~
In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry if there are a couple lumps).
Now its time to make the white sauce!~
In a medium bowl, mix together mayonnaise while gradually stirring in fresh lime juice until consistency is slightly runny.
Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
Heat oil in deep-fryer or oil filled pot to 375F.
Dust fish pieces lightly with flour.
Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels.
Lightly fry tortillas; not too crisp *if desired*.
To serve, place fried fish in a tortilla, and top with shredded cabbage or lettuce, and white sauce. Sliced avacados, tomatoes, lime are also GREAT with these!
Note: to heat the corn tortillas, use a plastic bag, put the tortillas in, max. 3 at the time and close the bag, not to tight and heat for about 30 secs ? or more, it depends on your microwave. to keep them warm, put them inside foil paper.
